Yields 1 cup
Arugula will spice up any dish with its peppery taste. It is complemented by any nut or fruit.
¼ cup almonds
6 cloves garlic
1 bunch arugula, roughly chopped
1/3 cup olive oil
Salt, to taste
Fresh-cracked black pepper, to taste
Chop the almonds in a food processor or blender. Add the garlic and process to form a paste. Add the arugula; pulse into the almond mixture.
While the blender is running, drizzle in the oil until the mixture is smooth. Add salt and pepper to taste.
