Chicken Sausage Patties
Yields 24 patties
These can be made smaller for appetizers in ball or patty form. Serve with spicy chutney for an added kick.
3 pounds ground turkey
1 medium yellow onion, finely minced
½ cup finely chopped Italian parsley
1 tablespoon chopped fresh sage or 2 teaspoons dry sage
6 cloves garlic, minced
1 tablespoon minced fresh ginger or 2 teaspoons dry ground ginger
2 teaspoons red pepper flakes
1 teaspoon ground cloves
1 teaspoon white pepper
4 tablespoons olive oil
In a large mixing bowl, combine all the ingredients; mix well by hand.
Form into 24 equally shaped patties that are approximately 2" × 1". Heat the oil in a large sauté pan. Sauté over medium heat for approximately 5 minutes on each side, until cooked through.
