Fish Club Sandwich

Serves 6

A refreshing variation on the common club sandwich.

6 slices pancetta or bacon

12 very thin slices whole-grain bread

1 tablespoon extra-virgin olive oil

12 lettuce leaves

2 tomatoes

1 red onion

¾ pound grilled fish

  • Cook the pancetta until it's crisp. Toast the bread lightly and brush with oil. Shred the lettuce, slice the tomatoes, and thinly slice the onion.

  • Layer the fish, veggies, and pancetta on the bread. Cut each sandwich into 4 sections
