Fish Club Sandwich
A refreshing variation on the common club sandwich.
6 slices pancetta or bacon
12 very thin slices whole-grain bread
1 tablespoon extra-virgin olive oil
12 lettuce leaves
1 red onion
¾ pound grilled fish
Cook the pancetta until it's crisp. Toast the bread lightly and brush with oil. Shred the lettuce, slice the tomatoes, and thinly slice the onion.
Layer the fish, veggies, and pancetta on the bread. Cut each sandwich into 4 sections
