Calzone

Serves 6

You can also use chicken or turkey sausage for a different flavor. Serve with Tomato Salad with Basil-Pine Nut Dressing (see recipe on page 90).

3 ounces dried sausage (soppressata)

3 ounces pepperoni

¼ bunch oregano, chopped

6 large basil leaves

1 tablespoon olive oil

1 recipe Flatbread dough (see recipe on page 182)

½ cup part-skim ricotta

3 ounces part-skim mozzarella

Kosher salt, to taste

Fresh-cracked black pepper

  • Preheat oven to 375°.

  • Finely dice the sausage, pepperoni, oregano, and basil. Brush baking sheet with oil.

  • Roll the dough out to ½-inch thickness and spread with ricotta, mozzarella, sausage, and pepperoni. Sprinkle with the spices.

  • Fold the dough in half and place on the prepared baking sheet; bake for approximately 30 minutes. Slice into 6 equal portions.
