Rye Dumplings
Serves 6
Dumplings can be used in stews; stuffed with meats, fruits, or vegetables; or served as a side dish covered in sauce.
¼ cup rye flour
½ cup all-purpose unbleached flour
¼ teaspoon salt
½ teaspoon baking soda
2 egg whites
¼ cup soy milk
½ cup olive oil
Sift together the flours, salt, and baking soda. Mix together the egg whites, milk, and oil.
Combine the wet and dry ingredients.
Dollop spoonfuls of the mixture into boiling water (or a prepared soup or stew). Cover and simmer for approximately 5 minutes.
