Rye Dumplings

Serves 6

Dumplings can be used in stews; stuffed with meats, fruits, or vegetables; or served as a side dish covered in sauce.

¼ cup rye flour

½ cup all-purpose unbleached flour

¼ teaspoon salt

½ teaspoon baking soda

2 egg whites

¼ cup soy milk

½ cup olive oil

  • Sift together the flours, salt, and baking soda. Mix together the egg whites, milk, and oil.

  • Combine the wet and dry ingredients.

  • Dollop spoonfuls of the mixture into boiling water (or a prepared soup or stew). Cover and simmer for approximately 5 minutes.
