Fry Bread
Serves 6
Once you have become a pro at making traditional fry bread, stir things up a bit by substituting buttermilk for the water.
½ cup all-purpose unbleached flour
¼ cup wheat flour
¼ cup cornmeal
¼ teaspoon salt
1/3 cup water
½ cup olive oil
Sift together the flours, cornmeal, and salt. Using a dough hook or your hands, combine the flour mixture with the water and 2 tablespoons of the oil.
On a lightly floured surface, roll out the dough 1/8-inch thick and cut into desired shapes.
Heat the remainder of the oil in a heavy-bottomed skillet (preferably cast iron) to medium-high temperature. Fry the dough until light golden brown, then drain each on a rack covered with paper towels.
Fry Bread Anytime
You can serve fry bread with just about any meal. For instance, if you serve it with a little butter and honey, you can pass it off as a dessert. Or, try shaping the bread into doughnuts before frying. Dip into powdered sugar once they have cooled enough and you'll have homemade doughnuts for breakfast!
