Sautéed Strawberries in Yogurt Soup

Serves 6

To make the most of this delectable dessert, serve with a dollop of nonfat vanilla yogurt.

1 cup skim milk

1 vanilla bean

2 tablespoons granulated sugar

2 cups nonfat plain yogurt

1 pint strawberries

1 tablespoon unsalted butter

¼ cup brown sugar

  • Heat the milk with the vanilla bean and granulated sugar in a small saucepan; let cool and remove vanilla bean. When the milk is completely cooled, whisk in the yogurt.

  • Slice the strawberries. Melt the butter and toss with the strawberries.

  • Serve yogurt soup in shallow bowl. Dollop with strawberry mixture and sprinkle with brown sugar.
