Sautéed Strawberries in Yogurt Soup
To make the most of this delectable dessert, serve with a dollop of nonfat vanilla yogurt.
1 cup skim milk
1 vanilla bean
2 tablespoons granulated sugar
2 cups nonfat plain yogurt
1 pint strawberries
1 tablespoon unsalted butter
¼ cup brown sugar
Heat the milk with the vanilla bean and granulated sugar in a small saucepan; let cool and remove vanilla bean. When the milk is completely cooled, whisk in the yogurt.
Slice the strawberries. Melt the butter and toss with the strawberries.
Serve yogurt soup in shallow bowl. Dollop with strawberry mixture and sprinkle with brown sugar.
