Poached Apples
Serves 6
To make the most of this dessert, give it a beautiful presentation by dusting the plate with cocoa powder or confectionery sugar.
6 Granny Smith apples
1 lemon
1 cup apple cider
¼ cup sweet white wine
3 whole cloves or ¼ teaspoon ground cloves
2 cinnamon sticks (or ½ teaspoon ground cinnamon)
¼ cup golden raisins
Peel the apples (coring optional). Zest and juice the lemon.
Place the apples in a large saucepan with the cider, wine, lemon juice, zest, cloves, and cinnamon; simmer, covered, on medium heat for 30 to 45 minutes, until the apples are fork tender. Remove apples and keep warm.
Reduce the cooking liquid. Serve apples sprinkled with raisins.
Which White Wine?
If you use a crisp, dry white wine you'll get a less sweet product. Instead, try using a sweet dessert white wine and savor the richness.
