Poached Apples

Serves 6

To make the most of this dessert, give it a beautiful presentation by dusting the plate with cocoa powder or confectionery sugar.

6 Granny Smith apples

1 lemon

1 cup apple cider

¼ cup sweet white wine

3 whole cloves or ¼ teaspoon ground cloves

2 cinnamon sticks (or ½ teaspoon ground cinnamon)

¼ cup golden raisins

  • Peel the apples (coring optional). Zest and juice the lemon.

  • Place the apples in a large saucepan with the cider, wine, lemon juice, zest, cloves, and cinnamon; simmer, covered, on medium heat for 30 to 45 minutes, until the apples are fork tender. Remove apples and keep warm.

  • Reduce the cooking liquid. Serve apples sprinkled with raisins.

Which White Wine?

If you use a crisp, dry white wine you'll get a less sweet product. Instead, try using a sweet dessert white wine and savor the richness.
