Date-Almond Tart
Serves 6
For an added kick, use flavored yogurt with this recipe.
1 cup flour
2 teaspoons olive oil
1 teaspoon ice water
1 cup chopped dried dates
½ cup chopped almonds
½ cup honey
1 cup plain nonfat yogurt
¼ cup confectioners' sugar
Preheat oven to 375°.
Mix together flour, olive oil, and ice water to form dough. Roll out dough into pie shell. Place in quiche or pie pan.
Mix together the dates, almonds, and honey. Place the date mixture in the center of the dough and loosely fold over pastry edges.
Bake for 20 minutes. Let cool and serve with yogurt and sprinkled confectioners sugar.
