Clafoutis with Fruit
Serves 2
Clafoutis originated as a dessert made with cherries, but you can use any fruits you love. You can also try serving it chilled.
2 teaspoons unsalted butter
½ cup granulated sugar
2 eggs
1½ cups milk
6 teaspoons all-purpose flour
Confectioners' sugar
2 cups seasonal fruit (cherries, raspberries, blueberries, blackberries, etc.)
Preheat oven to 400°.
Butter individual ovenproof dishes using 1 teaspoon of butter each. Sprinkle fruit with ¼ cup of the granulated sugar and arrange in the bottom of each dish.
Mix together the eggs, milk, remaining butter and granulated sugar, and the flour 1 teaspoon at a time until a smooth batter is formed.
Pour this mixture over the fruit and bake for approximately 20 minutes, then reduce heat to 325° and bake 10 minutes more. Insert a knife in the custard to test doneness. If the custard sticks to the knife, it isn't done yet. When the knife comes out clean, then it is done.
Sprinkle with confectioners' sugar and serve.
