Clafoutis with Fruit

Serves 2

Clafoutis originated as a dessert made with cherries, but you can use any fruits you love. You can also try serving it chilled.

2 teaspoons unsalted butter

½ cup granulated sugar

2 eggs

1½ cups milk

6 teaspoons all-purpose flour

Confectioners' sugar

2 cups seasonal fruit (cherries, raspberries, blueberries, blackberries, etc.)

  • Preheat oven to 400°.

  • Butter individual ovenproof dishes using 1 teaspoon of butter each. Sprinkle fruit with ¼ cup of the granulated sugar and arrange in the bottom of each dish.

  • Mix together the eggs, milk, remaining butter and granulated sugar, and the flour 1 teaspoon at a time until a smooth batter is formed.

  • Pour this mixture over the fruit and bake for approximately 20 minutes, then reduce heat to 325° and bake 10 minutes more. Insert a knife in the custard to test doneness. If the custard sticks to the knife, it isn't done yet. When the knife comes out clean, then it is done.

  • Sprinkle with confectioners' sugar and serve.
