Acorn Squash Bake

Serves 6

This can be used as a side dish for a starch as well as a dessert.

6 acorn squashes

2 cups apple juice

6 teaspoons fresh-grated orange zest

6 teaspoons rolled oats

6 teaspoons raisins

3 teaspoons ground cinnamon

1 teaspoon ground nutmeg

  • Preheat oven to 375°.

  • Cut the acorn squashes in half and remove seeds. Place halves cut-side down in a small roasting pan. Pour the apple juice over the top and cover tightly.

  • Bake for approximately 40 minutes. Turn squashes over and sprinkle each with 1 teaspoon zest, oats, and raisins. Sprinkle each with ½ teaspoon of cinnamon and a dash of nutmeg.

  • Baste with reduced apple juice. Cover and bake for 10 minutes longer. Then uncover and bake 10 minutes longer. Serve in individual bowls.
