Grilled Banana Pepper Salad
If you don't like hot peppers, make sure to choose sweet banana peppers for this recipe.
INGREDIENTS | SERVES 6
6 hot banana peppers (aka Hungarian or wax peppers)
½ cup Greek feta cheese, crumbled
2 tablespoons extra-virgin olive oil
2 tablespoons wine vinegar
1 teaspoon dried oregano
Grill peppers until they are soft and their skins are charred, approximately 8–10 minutes; peel.
Spread peppers flat on serving dish; add feta over top of peppers.
Drizzle a little olive oil and some wine vinegar over everything.
Finish with a sprinkle of oregano, and serve.
