Wilted Arugula on Flatbread

You can use slices of extra-crispy bacon in place of the pancetta.

INGREDIENTS | SERVES 6

1 teaspoon olive oil

2 ounces pancetta

3 cups fresh arugula

12 slices flatbread

Fresh-cracked black pepper

Heat the oil to medium temperature in a medium-size saucepan. Add the pancetta, and brown. Add the arugula, wilt, and immediately mound on the flatbread; add pepper to taste. Serve with Gorgonzola or your favorite cheese.
