Use fresh seasonal vegetables and either roast or grill them for this recipe.
INGREDIENTS | SERVES 6
1 large red onion
1 large head lettuce (any type)
6 large pitas
6 ounces hummus
4½ cups vegetables of your choice
2 tablespoons extra-virgin olive oil
Thinly slice the onion and shred the lettuce. Spread hummus on each pita. Layer with onion, lettuce, and roasted vegetables. Drizzle with olive oil, and serve.
