Baked Tuna Mac and Cheese Recipe

This super easy casserole can be made without the onion, or add other cooked leftover vegetables to the tuna mixture.

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 1 (5-ounce) package macaroni and cheese mix
  • ¼ cup milk
  • 1 egg, beaten
  • 1 cup Quick and Easy Salsa
  • 1 (6-ounce) can tuna, drained
  • ¼ cup grated Parmesan cheese
  1. Preheat oven to 350°F. Spray a 9″ baking dish with nonstick cooking spray and set aside. Bring a saucepan of water to a boil.

  2. In small saucepan combine olive oil and onion over medium heat; cook and stir until onion is tender, about 5 minutes.

  3. Add macaroni from mix to boiling water and cook until tender, according to package directions. Drain and return macaroni to saucepan.

  4. Add powdered cheese from mix, milk, egg, and onion mixture to macaroni and stir over low heat until combined.

  5. Pour macaroni mixture into prepared dish.

  6. In small bowl, combine salsa with drained tuna and mix well.

  7. Spoon over macaroni mixture and sprinkle with cheese.

  8. Bake for 15–25 minutes or until casserole is bubbling. Serve immediately.
