Cocoa Peach Parfaits Recipe
Beating a boiling hot sugar syrup into egg whites is how divinity is made. These parfaits are creamy and sweet, with a bit of crunch from the almonds. Yum.
SERVES ► 6
- 1 (16-ounce) can sliced peaches
- ½ cup reserved peach juice
- ¾ cup sugar
- 1 tablespoon water
- 2 egg whites
- ¾ cup heavy whipping cream
- ¼ cup cocoa powder
- 2 tablespoons powdered sugar
- 1 teaspoon vanilla
- ½ cup sliced almonds, toasted
Drain peaches, reserving juice. Chop peaches and set aside.
In small saucepan, combine ½ cup reserved juice, sugar, and water and bring to a boil. Boil, stirring, until sugar dissolves, then boil for 5 minutes.
Meanwhile, in medium bowl place egg whites. Beat until soft peaks form, then slowly drizzle in the hot sugar syrup, beating constantly. The egg whites will thicken as the syrup is added. Set aside to cool for 20 minutes.
In small bowl, combine cream, cocoa, powdered sugar, and vanilla and beat until stiff peaks form.
Fold into egg white mixture.
In stemmed goblets, layer egg white mixture with peaches, ending with egg white mixture.
Sprinkle with almonds, cover, and chill for at least 2 hours.
Parfaits
Parfaits are fabulous inexpensive and last-minute desserts. You can use pudding, mousse, ice cream, or flavored whipped cream as the base, and everything from chocolate chips to chopped candy to fruit, nuts, or granola for layering. They're also ideal for entertaining because they can be made ahead of time. Top with a dollop of whipped cream.
