Meatloaf Panini Recipe
Leftover meatloaf is not only good cold, but is truly spectacular in this hot sandwich.

- 8 slices Whole Wheat French Bread
- ¼ cup sour cream
- ¼ cup barbecue sauce
- 4 slices Mom's Meatloaf
- 4 slices Muenster cheese
- 3 tablespoons butter, softened
Heat a large skillet, panini maker, or indoor dual-contact grill. Cut the bread slices on an angle.
In small bowl combine sour cream and barbecue sauce. Spread on one side of each slice of bread.
Top half of bread slices with meatloaf, then Muenster cheese.
Top with remaining bread slices, sauce side down. Spread outsides of sandwiches with softened butter.
Grill sandwiches until bread is toasted and cheese is melted. If grilling on a skillet, cover the skillet while the sandwiches are cooking, and press down occasionally with a spatula. Cut in half and serve immediately.
