Zucchini Medley Recipe

This will serve 4–6 people, depending on the size of the zucchini! At the end of the harvest, some zucchini can get very large.

  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 1 zucchini, chopped
  • 1 cup frozen corn
  • 1 cup frozen peas
  • ½ teaspoon salt
  • ⅛ teaspoon pepper
  • ⅓ cup grated Parmesan cheese
  1. In large skillet, combine butter and olive oil over medium heat. Add onion; cook and stir for 2 minutes.

  2. Add zucchini, corn, and peas. Cook and stir for 2 minutes, then cover skillet and cook for 3 minutes.

  3. Uncover and stir again; sprinkle with salt and pepper and cook for 1–2 minutes longer until vegetables are tender and hot.

  4. Sprinkle with cheese and serve.
