Zucchini Medley Recipe
This will serve 4–6 people, depending on the size of the zucchini! At the end of the harvest, some zucchini can get very large.

- 2 tablespoons butter
- 1 tablespoon olive oil
- 1 onion, chopped
- 1 zucchini, chopped
- 1 cup frozen corn
- 1 cup frozen peas
- ½ teaspoon salt
- ⅛ teaspoon pepper
- ⅓ cup grated Parmesan cheese
In large skillet, combine butter and olive oil over medium heat. Add onion; cook and stir for 2 minutes.
Add zucchini, corn, and peas. Cook and stir for 2 minutes, then cover skillet and cook for 3 minutes.
Uncover and stir again; sprinkle with salt and pepper and cook for 1–2 minutes longer until vegetables are tender and hot.
Sprinkle with cheese and serve.
