Classic Sweet Potatoes Recipe

Double this delicious casserole to serve eight at Thanksgiving. The crunchy sweet topping is the perfect complement to the smooth potatoes.

  • 3 tablespoons butter, melted, divided
  • ¼ cup brown sugar
  • 2 tablespoons all-purpose flour
  • ½ cup Whole Grain Granola
  • 1 (17-ounce) can vacuum-pack sweet potatoes
  • 1 egg
  • 2 tablespoons milk
  1. Preheat oven to 350°F. Spray a 1-quart baking dish with nonstick cooking spray and set aside.

  2. In small bowl, combine 2 tablespoons butter, brown sugar, flour, and mix well.

  3. Stir in granola and set aside.

  4. Place sweet potatoes in large bowl and mash with potato masher.

  5. Beat in egg, milk, and remaining 1 tablespoon butter.

  6. Place in prepared dish and sprinkle with granola mixture.

  7. Bake for 20–30 minutes or until potatoes are hot and topping is crunchy and brown.

  8. Serve immediately.
