Oatmeal No-Bake Bars Recipe

This easy bar cookie is perfect for summer because you don't have to bake them. The chewy chocolate and peanut butter mixture is layered over a buttery crumb crust.

  • 2 cups crushed graham cracker crumbs
  • ¼ cup brown sugar
  • ½ cup finely chopped peanuts
  • ½ cup butter, melted
  • 2 cups sugar
  • ½ cup milk
  • ½ cup butter
  • 1 cup peanut butter
  • 3 cups quick-cooking oatmeal
  • 1 (11-ounce) package milk chocolate chips
  1. In large bowl, combine graham cracker crumbs, brown sugar, and peanuts and mix well.

  2. Stir in ½ cup melted butter until crumbs are coated. Press into a 9″ × 13″ pan and set aside.

  3. In heavy saucepan, combine sugar, milk, and ½ cup butter and cook over medium heat, stirring frequently, until mixture boils. Boil, stirring constantly, for 2 minutes.

  4. Remove from heat and stir in peanut butter until smooth.

  5. Stir in oatmeal until blended.

  6. Pour over graham cracker crust. Chill until firm.

  7. In heavy saucepan, melt chocolate chips over very low heat, stirring until smooth.

  8. Spoon and spread over bars, then chill again until firm. Store covered in the refrigerator.

Graham Cracker Crumbs

You can purchase graham cracker crumbs already crushed, but they are much more expensive. Thirty square graham crackers, crushed, will yield about 2 cups. To crush the crackers, break them into pieces and place them in a heavy duty plastic bag. Using a rolling pin, crush the crackers into fine crumbs, turning the bag as you work.
