Cinnamon Cookies Recipe

Graham crackers and brown sugar combine to create a crunchy crust on these tender little cookies. Pack them into lunchboxes for a nice surprise.

YIELDS ► 48 cookies

  • ½ cup butter, softened
  • ½ cup margarine
  • 1 cup sugar
  • 1½ cups brown sugar, divided
  • 2 eggs
  • 1 teaspoon vanilla
  • 2⅓ cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 teaspoons cinnamon, divided
  • ½ cup crushed graham cracker crumbs
  1. Preheat oven to 350°F.

  2. In large bowl, combine butter, margarine, sugar, and 1 cup brown sugar and beat until fluffy.

  3. Add eggs and vanilla and beat until combined.

  4. Stir in flour, baking powder, baking soda, salt, and 1 teaspoon cinnamon.

  5. On shallow plate, combine ½ cup brown sugar, graham cracker crumbs, and 1 teaspoon cinnamon and mix well.

  6. Form dough into ¾″ balls and roll in graham cracker mixture to coat; gently press graham cracker mixture into cookies so it doesn't fall off. Place on ungreased cookie sheets.

  7. Bake 10–14 minutes or until cookies are set and light golden brown.

  8. Cool on wire racks; store at room temperature.

Replace Your Spices

Dried spices (and herbs too) only retain their flavor for about a year. When you buy fresh spices, mark the purchase date on the bottle or jar with a grease pencil. After they are about six months old, smell them before using. If the spice doesn't smell intense and flavorful, chances are it won't add flavor to the recipe. Discard and buy new spices.
