Casserole Cookies Recipe

Purchase whole dates for this recipe. You can find them in the bulk section of the supermarket. The precut dates are too hard and won't dissolve as the mixture bakes.

YIELDS ► 36 cookies

  • 3 eggs
  • ½ cup sugar
  • ½ cup brown sugar
  • 1 cup finely chopped dates
  • 1 cup chopped walnuts
  • 1 cup regular oatmeal
  • 1 teaspoon vanilla
  • ½ cup white chocolate chips, chopped
  • Powdered sugar
  1. Preheat oven to 350°F.

  2. In large bowl, beat eggs until light yellow. Gradually add sugar and beat until fluffy.

  3. Add brown sugar and beat well.

  4. Stir in dates, walnuts, and oatmeal and mix well.

  5. Place mixture in a 2-quart casserole dish. Bake for 30–40 minutes, stirring once during baking, until light golden brown.

  6. Remove casserole from oven and beat mixture for 3 minutes.

  7. Let cool until lukewarm. Stir in vanilla and white chocolate chips.

  8. Form mixture into 1″ balls and roll in powdered sugar.

  9. Let cool completely; store covered at room temperature.

Vanilla

Pure vanilla extract can be very expensive. In fact, you can buy gourmet extract, made from premium vanilla beans. Imitation extract is much less expensive. You can use the imitation when the flavor isn't as important, or when the recipe already has many different flavors, as in this recipe.
