Caramel Coconut Bars Recipe
These chewy bar cookies are so good and so easy to make. They keep well, if you have any left to store!

YIELDS ► 36 bars
- 1 cup margarine or butter, softened
- 1¼ cups brown sugar, divided
- 2 eggs
- 1½ cups all-purpose flour
- 1 (14-ounce) can sweetened condensed milk
- 2 cups coconut
- 1 teaspoon vanilla
- ¼ cup butter
- 3 cups powdered sugar
- 3–4 tablespoons milk
Preheat oven to 325°F.
Grease a 9″ × 13″ pan with solid shortening and dust with flour; set aside.
In large bowl, combine margarine, 1 cup brown sugar, and eggs and beat well.
Add flour and mix until a dough forms. Spread into prepared pan.
In small bowl, combine condensed milk, coconut, and vanilla and mix well. Spoon and spread over crust.
Bake 15–25 minutes or until bars are light golden brown. Cool completely.
In small saucepan, combine butter with ¼ cup brown sugar; cook and stir over medium heat until mixture blends and comes to a boil.
Remove from heat and add 2 tablespoons milk.
Beat in powdered sugar, then add enough additional milk for spreading consistency.
Frost bars, let stand until firm, then cut into squares.
