Butterscotch Brownies Recipe
The ground oatmeal adds chewiness to this updated brownie recipe.

- ½ cup butter
- 1½ cups brown sugar
- 2 eggs
- 2 tablespoons corn syrup
- ½ cup ground oatmeal
- ½ cup butterscotch chips, ground
- 1½ teaspoons vanilla
- 1½ cups all-purpose flour
- 1½ teaspoons baking powder
- 1 cup sugar
- ¼ cup milk
- 2 tablespoons butter
- 1 (12-ounce) package semisweet chocolate chips
Preheat oven to 350°F. Spray a 9″ × 13″ pan with baking spray containing flour and set aside.
In heavy saucepan, melt butter over medium heat. Cook butter, stirring constantly, until brown flecks appear.
Remove from heat and stir in brown sugar.
Beat in eggs and corn syrup. Add ground oatmeal and butterscotch chips.
Stir in vanilla, flour, and baking powder and mix well. Spoon batter into prepared pan.
Bake 25–35 minutes or until just set. Do not overbake. Let cool on wire rack.
For frosting, combine sugar, milk, and 2 tablespoons butter in heavy saucepan. Cook over medium heat until mixture comes to a rolling boil. Remove from heat and stir in chocolate chips, beating until frosting is smooth.
Pour frosting over cooled brownies and let stand until firm. Cut into bars and store at room temperature.
