Brown Sugar Shortbread Recipe

These bar cookies taste a lot like a popular name-brand candy bar, but they are tender and chewy rather than ultra crunchy. For a splurge, use all butter and cashews in place of walnuts.

YIELDS ► 36 bars

  • ½ cup butter, softened
  • ½ cup margarine
  • 1 cup brown sugar
  • 1 egg
  • 2 teaspoons vanilla
  • 1 cup oatmeal, ground
  • 1½ cups all-purpose flour
  • ¼ cup whole wheat flour
  • ½ teaspoon salt
  • 1 cup semisweet chocolate chips
  • 1 cup milk chocolate chips
  • 1 cup chopped walnuts
  1. Preheat oven to 325°F.

  2. In large bowl, combine butter and margarine along with brown sugar; beat until blended.

  3. Add egg and beat well.

  4. Stir in vanilla, then oatmeal, flour, whole wheat flour, and salt.

  5. Spread mixture into 10″ × 15″ jelly roll pan.

  6. Bake 15–25 minutes or until bars are set.

  7. In small microwave-safe bowl, combine both kinds of chocolate chips. Melt at 50 percent power for 2 minutes, then remove from microwave and stir until melted and smooth.

  8. Pour over warm bars and spread carefully.

  9. Sprinkle with nuts, then cool completely and cut into bars.
