Brown Sugar Shortbread Recipe
These bar cookies taste a lot like a popular name-brand candy bar, but they are tender and chewy rather than ultra crunchy. For a splurge, use all butter and cashews in place of walnuts.

- ½ cup butter, softened
- ½ cup margarine
- 1 cup brown sugar
- 1 egg
- 2 teaspoons vanilla
- 1 cup oatmeal, ground
- 1½ cups all-purpose flour
- ¼ cup whole wheat flour
- ½ teaspoon salt
- 1 cup semisweet chocolate chips
- 1 cup milk chocolate chips
- 1 cup chopped walnuts
Preheat oven to 325°F.
In large bowl, combine butter and margarine along with brown sugar; beat until blended.
Add egg and beat well.
Stir in vanilla, then oatmeal, flour, whole wheat flour, and salt.
Spread mixture into 10″ × 15″ jelly roll pan.
Bake 15–25 minutes or until bars are set.
In small microwave-safe bowl, combine both kinds of chocolate chips. Melt at 50 percent power for 2 minutes, then remove from microwave and stir until melted and smooth.
Pour over warm bars and spread carefully.
Sprinkle with nuts, then cool completely and cut into bars.
