Tex-Mex Turnovers Recipe

These turnovers are perfect for a party. You can make them about half this size by cutting the filo into two 14″ × 4½″ rectangles and serve as appetizers.

  • ½ pound ground pork sausage
  • 1 onion, chopped
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 (15-ounce) can refried beans
  • 2 tablespoons water
  • 32 (14″ × 9″) filo pastry sheets, thawed
  • ⅓ cup butter, melted
  • 1 cup Quick and Easy Salsa
  • 2 cups shredded Cheddar cheese
  1. In large saucepan, combine sausage and onion over medium heat. Cook and stir until sausage is browned.

  2. Drain well, then add chili powder, cumin, refried beans, and water and mix well. Simmer for 5 minutes. Let cool for 20 minutes.

  3. Unwrap filo sheets and cover with damp towel.

  4. Place one rectangle on work surface, brush with melted butter, and top with another rectangle.

  5. Place about ¼ cup sausage mixture at short end of rectangle, leaving about a ½″ border. Top with a spoonful of salsa and 2 tablespoons cheese.

  6. Starting at short end, roll the filo over the filling. Fold sides in, then continue rolling to the end.

  7. Seal edge with melted butter. Brush with butter and place on cookie sheet.

  8. Repeat with remaining filo, filling, salsa, and cheese.

  9. Preheat oven to 375°F. Bake turnovers for 20–30 minutes or until pastries are golden brown. Serve with salsa and sour cream, if desired.
