Mexican Rice Recipe

You could add some sliced olives or corn to this recipe, or serve warmed corn tortillas and shredded cheese so your guests can make burritos.

  • ¾ pound ground pork sausage
  • 1 onion, chopped
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1½ cups long grain rice
  • 1½ cups water
  • 1 (14-ounce) can diced tomatoes, undrained
  • 1 (4-ounce) can green chiles, undrained
  • ½ cup chili sauce
  • 1 tablespoon chili powder
  • ½ teaspoon salt
  • ⅛ teaspoon cayenne pepper
  1. In large saucepan, cook sausage and onion over medium heat, stirring frequently, until sausage is almost cooked. Drain.

  2. Add olive oil and butter to saucepan and stir in rice. Cook and stir for 2–4 minutes until rice turns opaque.

  3. Add water, tomatoes, and remaining ingredients and bring to a boil.

  4. Cover, reduce heat, and simmer for 20–25 minutes or until rice is tender and liquid is absorbed.

  5. Let stand for 5 minutes, then stir and serve immediately.

Brown Rice

If you want to use brown rice the cooking time will be longer. Read the directions to find out the exact cooking time for the brand of rice you choose. Usually, brown rice takes twice as long to cook, but some varieties, including brown Basmati rice, have shorter cook times.
