Linguine with Mushroom Sauce Recipe

When condensed soups go on sale, stock up! They are an excellent addition to many recipes and can be used as sauce for chicken or beef.

  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 (4-ounce) can mushroom pieces, drained
  • 1 (10.75-ounce) can condensed cream of mushroom soup
  • 1¼ cups milk
  • ⅛ teaspoon nutmeg
  • 1 (16-ounce) package linguine
  • ⅓ cup grated Parmesan cheese
  1. Bring a large pot of salted water to a boil. Cook linguine until al dente according to package directions.

  2. Meanwhile, in large saucepan, combine olive oil and butter over medium heat. Add onion and garlic; cook and stir until tender, about 5 minutes.

  3. Add mushrooms; cook and stir for about 3 minutes.

  4. Add soup, milk, and nutmeg; stir and bring to a simmer.

  5. Drain linguine and add to saucepan with mushroom mixture.

  6. Sprinkle with half of cheese and toss to coat. Serve immediately, topped with remaining cheese.
