Greek Pasta Recipe

You can turn pasta into any ethnic cuisine just with the ingredients you choose. This Greek pasta is flavorful and delicious.

  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 2 onions, chopped
  • 3 cloves garlic, minced
  • 2 cups frozen chopped spinach, thawed
  • 1 (14-ounce) can diced tomatoes, undrained
  • ½ teaspoon salt
  • ⅛ teaspoon pepper
  • 1 (16-ounce) package linguine
  • ½ cup crumbled feta cheese
  1. Bring a large pot of salted water to a boil. Cook pasta until al dente according to package directions.

  2. Meanwhile, in large saucepan combine olive oil and butter over medium heat. When butter melts, add onion and garlic; cook and stir until crisp-tender, about 4 minutes.

  3. Add spinach to pan; cook and stir until water evaporates.

  4. Add undrained tomatoes, salt, and pepper and bring to a simmer. Reduce heat and cover.

  5. Drain pasta, reserving ¼ cup cooking water.

  6. Add pasta to saucepan and toss gently, adding some of the reserved cooking water if necessary.

  7. Sprinkle with feta and serve immediately.

Al Dente

Al Dente is the Italian term that translates literally as “to the tooth.” This means that the pasta is tender to the bite, but still has a slightly give in the center. It's important to not overcook pasta or it will become gummy. Start testing the pasta a couple of minutes before the package says it is done to be sure it's perfect.
