Rich Baked Beans Recipe

On the coldest day of winter, have these beans simmering in the oven to fill your home with warmth and fabulous aroma. Serve with warm, tender Brown Bread.

  • 1 pound navy beans
  • 1 onion, finely chopped
  • 1 teaspoon salt
  • 3 tablespoons mustard
  • ½ cup brown sugar
  • ½ cup ketchup
  • 3 tablespoons tomato paste
  • ½ cup molasses
  • ¼ teaspoon pepper
  1. Sort the beans and rinse well; drain. Cover with cold water and soak overnight.

  2. The next day, drain the beans well and rinse again.

  3. Place beans in a large soup pot and cover with more cold water; bring to a boil over medium heat.

  4. Simmer, uncovered, for 1½ hours. Drain beans, reserving liquid.

  5. Pour beans into a 3-quart casserole dish and add onion, salt, mustard, brown sugar, ketchup, tomato paste, molasses, and pepper and mix thoroughly until well combined.

  6. Add reserved bean liquid to just cover the beans. Cover the dish tightly with aluminum foil and place in oven.

  7. Bake at 325°F for 4 hours, checking once during cooking time and adding reserved bean liquid as necessary, until mixture is thick and beans are tender. Serve immediately.
