Gazpacho Recipe
Gazpacho is the perfect answer to a garden bursting with ripe tomatoes. Serve it with Lemon Chocolate Pie for dessert.

- 4 ripe tomatoes, chopped
- ½ cup orange juice
- 2 teaspoons sugar
- 2 cucumbers
- 1 (46-ounce) can tomato juice
- 2 green bell peppers, chopped
- 1 red onion, chopped
- 1 teaspoon salt
- ⅛ teaspoon white pepper
- ½ teaspoon Tabasco sauce
- 1 teaspoon dried tarragon leaves
- 1 cup water
- 1 cup Hot and Spicy Popcorn
- ¼ cup chopped fresh parsley
In large bowl, mix tomatoes, add orange juice, and sugar and stir.
Peel cucumbers, cut in half, remove seeds, and chop. Add to tomato mixture along with tomato juice, bell peppers, and red onion.
Add salt, pepper, Tabasco sauce, tarragon, and water and stir gently but thoroughly.
Cover and chill soup for at least 2 hours before serving. Top with popcorn and parsley.
