Garlic Tomato Bisque Recipe
Heavy cream is a splurge, but it's necessary for the creamy texture characteristic of bisques. Garnish with some tiny grape tomatoes if you're feeling rich!

- 1 tablespoon olive oil
- 2 tablespoons butter
- 1 onion, finely chopped
- 5 cloves garlic, minced
- 2 (10.75-ounce) cans condensed tomato soup
- 1 (8-ounce) can tomato sauce
- 3 cups water
- ½ teaspoon dried basil leaves
- ½ cup heavy cream
- ½ cup milk
In large pot, combine olive oil and butter over medium heat. Cook onion and garlic, stirring frequently, until tender, about 5–6 minutes.
Add soups, sauce, water, and basil. Bring to a simmer and simmer for 10 minutes.
Add cream and milk and stir well. Heat soup through but do not boil. Serve immediately with croutons and a sprinkle of Parmesan cheese.
