BBQ Chicken Recipe

Making your own barbecue sauce lets you use your imagination. You could add bell peppers, celery, more herbs and spices, or even chili sauce.

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • ¼ cup apple cider vinegar
  • ¼ cup brown sugar
  • 1 tablespoon mustard
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 2 tablespoons Worcestershire sauce
  • 1 cup ketchup
  • 2 tablespoons lemon juice
  • 1 teaspoon Tabasco sauce
  • 3 pounds cut-up chicken
  • 1 teaspoon salt
  • ¼ teaspoon white pepper
  1. In large saucepan, heat olive oil over medium heat. Add onion and garlic; cook and stir until tender, about 5 minutes.

  2. Add vinegar, brown sugar, mustard, chili powder, salt, Worcestershire sauce, and ketchup and bring to a simmer. Reduce heat to low and simmer for 30 minutes.

  3. Stir lemon juice and Tabasco sauce into sauce and set aside.

  4. Preheat oven to 375°F. Sprinkle chicken with 1 teaspoon salt and white pepper and arrange in large roasting pan. Bake for 45 minutes.

  5. Pour sauce over chicken and bake for 30–40 minutes longer until chicken is thoroughly cooked. Serve chicken with sauce.

Barbecue Sauce

Barbecue sauces are almost always tomato-based, with spices and seasonings added. Ketchup is a standard ingredient, as is Tabasco sauce, vinegar, and some type of sugar. You can make your own barbecue sauce by adding more of any of these ingredients, or by adding mustard and spices such as chili powder, cumin, or garlic powder.
