Toasted Cheese Sandwiches Recipe
You could use the peanut spread as a sandwich all by itself, or pair it with some sliced ham or chicken.
SERVES ► 4
- ½ cup chopped peanuts
- 1 (3-ounce) package cream cheese, softened
- ½ cup chopped celery
- 2 tablespoons mayonnaise
- 8 slices Artisan Whole Wheat Bread
- 1 cup shredded Swiss cheese
- 1 cup shredded Colby cheese
- 2 tablespoons butter, softened
In a small bowl, combine peanuts, cream cheese, celery, and mayonnaise, mixing until combined.
To make sandwiches, spread peanut spread on one side of each piece of bread. Top each with some of the cheeses, then put together.
Spread butter on outsides of sandwiches.
Toast in a dual-contact grill or on a hot griddle, pressing down on the sandwiches as they cook.
When bread is toasted and the filling is melted, cut in half and serve immediately.
Dual Contact Grill Substitute
You can still cook these sandwiches without a dual contact grill. Heat a regular griddle or skillet, add the sandwiches, then place a second, smaller skillet, bottom side down, on the sandwiches. Press gently on them as the sandwiches cook. Then turn and cook the second side, without the second skillet.
