Gourmet Grilled Cheese Spread Recipe

Cheese is an excellent source of protein and it's inexpensive too. Combine your favorite types to make this spread that will keep in the fridge up to 4 days.

COST PER SERVING ► 32¢

YIELDS ► 2¼ cups

SERVING SIZE ► 3 tablespoons

  • ½ cup ricotta cheese
  • 1 cup shredded sharp Cheddar cheese
  • 1 cup shredded Swiss cheese
  • 1 cup shredded American cheese
  • 1 tablespoon butter or margarine
  • ½ teaspoon dried basil leaves
  1. In medium bowl, combine ricotta cheese with Cheddar cheese and mix well.

  2. Add remaining ingredients and mix until blended. Cover and refrigerate up to 4 days.

  3. To use, spread about 3 tablespoons of the spread between two slices of bread.

  4. Butter the outsides of the bread, then grill, either on a skillet over medium heat, or on a dual contact indoor grill, until the bread is toasted and cheese melts.

Sharp or Mild Cheese?

Whether you buy sharp or mild cheese is really all about your tastes. If you want a lot of impact with less cheese, either for financial or health reasons, choose a sharper flavor cheese. About a cup of sharp Cheddar cheese will flavor an entire casserole or pizza.
