Chili Quesadillas Recipe
This hearty dish could serve 8–10 as an appetizer (cut into eighths). If you'd like, top it with sour cream and more cheese.

- 8 (8-inch) flour tortillas
- ½ cup sour cream
- 1 (4-ounce) can green chiles, drained
- 1 cup shredded Cheddar cheese
- 1 cup shredded Swiss cheese
- 2 tablespoons butter
- 2 cups Homemade Chili
In small bowl, combine sour cream with green chiles and mix well.
Place tortillas on work surface. Spread mixture onto all tortillas. Top with cheeses, then put tortillas together to make four quesadillas.
Melt butter on large skillet over medium heat until sizzling.
Add quesadillas and cook, turning once, until tortillas are toasted and cheese is melted. While quesadillas are cooking, heat chili in microwave until hot.
Cut quesadillas into quarters and place on serving dish; spoon hot chili over all. Serve immediately.
