Avocado Smash Sandwiches Recipe

Avocados are expensive, but with this recipe you can stretch one to feed four people.

  • 1 avocado
  • ⅓ cup sour cream
  • ¼ teaspoon salt Pinch white pepper
  • 1 cup grape tomatoes
  • 1 cucumber, peeled
  • 8 slices Artisan Whole Wheat Bread
  • 2 tablespoons butter, softened
  • 4 (1-ounce) slices Swiss cheese
  1. Peel avocado, remove pit, and place in small bowl.

  2. Top with sour cream, salt, and pepper, and mash, leaving some chunks.

  3. Cut grape tomatoes in half and add to avocado mixture.

  4. Cut cucumber into thin slices.

  5. Toast bread until golden brown, then butter one side of each piece. Place, buttered side up, on work surface.

  6. Layer cheese and cucumber on half of slices. Spread avocado mixture on other half, and put together to make sandwiches. Serve immediately.

Freezing Avocados

When avocados go on sale, you can buy a bunch and freeze them. But don't freeze them whole or in slices; they will become mushy. Peel the avocado, remove the pit, and mash with 1 tablespoon lemon juice for each piece of fruit. Pack into a hard-sided container, label, and freeze for up to 3 months. They're delicious in spreads and Big Batch Guacamole.
