Popovers Recipe

Popovers are showy and a nice treat, and they're easy to make as long as you follow the recipe carefully. Serve hot with lots of butter.

COST PER SERVING ► 8¢

YIELDS ► 6 popovers

  • 2 eggs
  • ¾ cup all-purpose flour
  • 2 tablespoons bread flour
  • 2 tablespoons whole wheat flour
  • ½ teaspoon salt
  • 1 cup whole milk
  1. Preheat oven to 425°F. Grease a popover pan or six 6-ounce custard cups very generously with solid shortening or unsalted butter; set aside.

  2. In a medium bowl, beat eggs until blended. Place all-purpose flour, bread flour, whole wheat flour, and salt in a sifter. Sift over eggs, add milk, and beat with an eggbeater or wire whisk just until batter is smooth and blended.

  3. Divide mixture among prepared popover pans or custard cups. If using custard cups, place on a cookie sheet.

  4. Bake for 15 minutes, then reduce oven temperature to 350°F and bake for 20–25 minutes longer until puffed and deep golden brown. Serve immediately.
