Pita Breads Recipe
Pita Breads are such fun to make, and the homemade ones are so much more delicious than store-bought. And they freeze beautifully too!

YIELDS ► 12 breads
- 1 (0.25-ounce) package active dry yeast
- 1½ cups warm water
- 1 tablespoon corn oil
- 1 tablespoon sugar
- 1 teaspoon salt
- 2–3 cups all-purpose flour
- 1 cup whole wheat flour
- 1 cup bread flour
In large bowl, combine yeast and ¼ cup water; mix and let stand until bubbly. Add remaining warm water, oil, sugar, and salt. Stir in 1 cup all-purpose flour, the whole wheat flour, and bread flour and beat for 3 minutes at medium speed.
Gradually add enough all-purpose flour to form a firm dough. On lightly floured surface, knead dough until smooth and elastic, about 6 minutes. Place in greased bowl, turning to grease top. Cover and let rise for 1 hour until doubled.
Punch down dough and divide into 12 balls. Preheat oven to 500°F. On floured surface, roll each ball to a 6″ circle, dusting with flour and turning occasionally to make sure ball doesn't stick to surface.
Using a large spatula, carefully transfer 4 pita breads directly to the oven rack and close door quickly. Bake for 4–7 minutes, watching carefully, until breads puff and begin to form brown spots. Remove from oven and let cool on wire rack. Repeat with remaining dough. To use, cut breads in half to expose the pocket.
Oven Temperature
When you're baking breads, especially those which bake in just a few minutes like pita bread, accurate oven temperature is very important. To make sure that your oven is properly calibrated, buy an oven thermometer and use it to check the temperature. If the oven temperature is off, call a certified repair person and have it calibrated.
