Peanut Butter Bread Recipe

Peanut butter is a high quality and inexpensive form of protein when combined with grains. This hearty loaf is great for breakfast on the run.

COST PER SERVING ► 24¢

YIELDS ► 1 loaf (or 16 slices)

  • ⅓ cup peanut butter
  • 2 tablespoons butter or margarine
  • 1 cup brown sugar
  • 1 egg
  • 1 ¾ cups all-purpose flour
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup buttermilk
  • ¼ cup peanut butter
  • ⅓ cup brown sugar
  • ⅓ cup all-purpose flour
  1. Preheat oven to 350°F. Grease an 8″ × 4″ loaf pan with solid shortening and set aside.

  2. In large bowl, combine ⅓ cup peanut butter, butter, and 1 cup brown sugar and beat until blended. Add egg and beat well.

  3. In small bowl, combine 1¾ cups flour, baking soda, and salt. Add dry ingredients alternately with buttermilk to peanut butter mixture.

  4. For streusel topping, in small bowl, combine ¼ cup peanut butter and ⅓ cup brown sugar and blend well. Add ⅓ cup flour and blend until crumbs form.

  5. Pour batter into prepared pan and sprinkle streusel over loaf. Bake for 45–55 minutes or until toothpick comes out clean when inserted into loaf. Cool on wire rack.
