Banana Bread Recipe

Cake mix is less expensive than assembling the ingredients yourself, and it's much quicker. This easy quick bread is perfect for breakfast on the run.

COST PER SERVING ► 21¢

YIELDS ► 2 loaves (or 24 slices)

  • 1 (18-ounce) box spice cake mix
  • 3 eggs
  • ⅓ cup corn oil
  • 1 (6-ounce) jar puréed pears
  • 2 ripe bananas, mashed
  • 1 cup chopped walnuts
  • 3 tablespoons sugar
  • ½ teaspoon cinnamon
  1. Preheat oven to 350°F. Spray two 9″ × 5″ loaf pans with nonstick cooking spray containing flour and set aside.

  2. In large bowl, combine first five ingredients. Beat until combined, then beat for 3 minutes at medium speed. Stir in walnuts and pour batter into prepared pans.

  3. In small bowl, combine sugar and cinnamon and mix well. Sprinkle over batter in pans.

  4. Bake for 30–40 minutes or until bread is golden brown, toothpick inserted in center comes out clean, and bread pulls away from sides of pan.

  5. Let cool in pans for 5 minutes, then turn out onto wire racks to finish cooling.

Cake Mixes

Cake mixes often go on sale at the grocery store and big box chains. When they do, stock up! They store very well, and should be marked with a “best if used by” date. Still, mark the purchase date on the box with a marker, and be sure to store them so you can rotate the boxes from oldest to newest as you use them.
