Stretch Your Scrambled Eggs Recipe

Cooking scrambled eggs in a double boiler may seem strange, but it's the best way to get the fluffiest result. It does take a bit more time, but it's worth it.



  • 3 tablespoons butter
  • 14 eggs
  • ½ cup skim milk
  • ¼ cup sour cream
  • ½ teaspoon salt
  • ⅛ teaspoon pepper
  1. Place a large saucepan with 1½″ of water over medium heat and bring to a simmer. Carefully place slightly smaller saucepan in the water and add butter; let melt.

  2. In large bowl, combine eggs, milk, sour cream, salt, and pepper and beat well with eggbeater or wire whisk.

  3. Pour egg mixture into melted butter in top saucepan. Cook, stirring occasionally, for about 30–40 minutes or until eggs are set and creamy. Serve immediately.

  4. NOTE: You can also cook the eggs in a skillet directly over medium heat, stirring frequently, for about 5–7 minutes.

How to Cook Eggs

Eggs are an excellent source of complete protein and are very inexpensive. Usually they are best cooked over medium-low heat, and cooked quickly.
