Americanized Aebleskiver Recipe

Aebleskiver (pronounced AB-el-skiv-er) are like silver dollar pancakes, but are fluffier, with a richer flavor. They're perfect for a leisurely Sunday brunch. For a splurge, buy an Aebleskiver pan!

SERVES ► 4–6

  • 4 eggs, separated
  • 2 tablespoons sugar
  • 1½ cups milk
  • 2 cups all-purpose flour
  • ½ teaspoon salt
  • 1½ teaspoons baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon nutmeg
  • 2–3 tablespoons butter
  1. In large bowl, beat egg whites until frothy; gradually add sugar until stiff peaks form; set aside.

  2. In small mixer bowl, combine egg yolks, milk, flour, salt, baking powder, baking soda, and nutmeg and beat until smooth. Stir a dollop of the egg whites into the egg yolk mixture, then fold remaining egg yolk mixture into the egg whites until blended.

  3. In large skillet, melt butter until foamy. Drop batter by tablespoon measures into hot butter.

  4. Cook until the bubbles start to burst, about 2 minutes, then carefully flip each pancake and cook for 1–2 minutes on the other side. Serve immediately with jam and powdered sugar.
