Passion Beet Borscht

This is a creamy version of the classic Russian-style soup. Beets are nutrition-packed elixirs of life, chock full of anti-aging, immune-boosting nutrient compounds. Beet juice is also helpful for relaxing an overly contracted health condition.

INGREDIENTS | SERVES 4

  • 2 cups beets, diced
  • 5 cups spring water
  • 1 medium carrot, diced
  • 1 medium parsnip, diced
  • 1 medium onion, diced
  • 1½ teaspoons caraway seeds
  • ½ cup red cabbage, chopped
  • 1 teaspoon sesame oil
  • 4 teaspoons sweet white miso
  • Lemon juice, to taste
  • ¼ cup fresh dill, chopped
  1. In a saucepan, add beets in water. Bring to boil, cover, and simmer for about 15 minutes.

  2. Add carrot and parsnip and continue to cook over medium heat until vegetables are tender, about 15 minutes.

  3. In a skillet, sauté onions with caraway seeds and cabbage in oil until soft. Add onions and cabbage to the soup.

  4. Purée miso in a little cooking liquid. Add miso purée to soup and simmer for 3 more minutes.

  5. Purée soup in a blender until creamy. Add lemon juice to taste. Garnish with freshly chopped dill.

Cooking with Water

The energy of a dish depends on how much water you add and when you add it. Adding water at the beginning of cooking dilutes flavors and makes a weaker dish. To make flavors stronger and more concentrated, add less water at the beginning and then add more water later (this does not dissolve the first effect).
