Shiitake Beet Daikon Sauce

This delectable sauce adds nutritious flavor to greens, grains, and vegetables. Shiitakes and daikon can help dissolve fats from oily winter cooking. Nutrient compounds in beets may protect against cancer, inflammation, and heart disease.

INGREDIENTS | SERVES 5

  • 1 small daikon, chopped
  • 1 small beet, chopped
  • Spring water, as needed
  • 1 cup onion, sliced into half moons
  • 1 tablespoon olive oil
  • 1 cup fresh shiitake mushrooms
  • Shoyu, to taste
  1. In a saucepan, add daikon, beet, and water to cover. Bring to a boil, lower heat, and simmer, covered, until vegetables are soft.

  2. In a skillet, sauté onion in oil until translucent. Add shiitakes and sauté until cooked through.

  3. In a blender, blend beet, daikon, onion, and shiitake, slowly adding cooking water until desired consistency is reached. Season with shoyu, to taste.
