2 envelopes KNOX Unflavored Gelatine

½ cup frozen, unsweetened apple juice concentrate

3 cups unsweetened sparkling water

1 cup sliced strawberries

1 cup blueberries

2 large bananas, peeled and sliced

  • Mix together the gelatin and apple juice in a small saucepan; let stand for 1 minute. Stir the gelatin over low heat until completely dissolved, about 3 minutes. Let cool slightly.

  • Stir in the sparkling water. Refrigerate until the mixture begins to gel or is the consistency of unbeaten egg whites when stirred, about 15 minutes. (Be careful not to chill too long or it will solidify and you won't be able to add the fruit.)

  • Fold the fruit into the partially thickened gelatin mixture. Pour into a 6-cup mold. Refrigerate for 4 hours or until set.
