½ cup plain nonfat yogurt
1 large Granny Smith apple, peeled, cored, and grated
1 tablespoon lemon juice
2 teaspoons honey
⅛ teaspoon ground cinnamon
¼ cup coarse-ground unsalted, dry-roasted almonds
¼ cup shredded Cheddar cheese
4 Thomas' English Muffins, split

Place the yogurt between several layers of paper towels for 10 to 15 minutes. Toss the grated apple with the lemon juice, then place between layers of paper towels and blot dry. Use a spatula to scrape the yogurt and apple into a bowl. Add the honey, cinnamon, almonds, and Cheddar cheese; mix well. Toast the muffins. Lightly spray the tops and bottoms of the muffins with the spray oil. Place the muffin halves (sprayed-sides down) on a baking sheet and top with the Cheddar mixture. Place under the broiler until the cheese is melted and bubbly.
