1 cup Now Foods bulgur cracked-wheat cereal, cooked
2 cups boiling water
½ cup chopped fresh parsley
2 large tomatoes, peeled and finely chopped
1 large cucumber, peeled, seeded, and finely chopped
2 carrots, peeled and shredded
2 large stalks celery, diced
2 tablespoons lemon juice
¼ teaspoon freshly ground black pepper
–⅛ teaspoon mustard powder
1 clove garlic, minced
¼ teaspoon celery seeds
Add the bulgur to a large mixing bowl and pour the boiling water over it. Cover and set aside for 30 minutes.
Add the remaining ingredients to the bowl and stir to combine. Cover and chill for at least 2 hours. (This gives the salad time to soak in its own juices and brings out the flavor of all the ingredients.)
