1 (1-ounce) slice whole-milk mozzarella cheese

2 (1-ounce) slices Old-Style Whole- Wheat Bread

2 large iceberg lettuce leaves

2 teaspoons Homemade Mayonnaise

2 wedges Oven-Dried Seasoned Tomatoes, finely chopped

1 scallion, white and green parts finely chopped

1 tablespoon finely minced celery

Pinch freshly ground black pepper

  • Place the mozzarella cheese between the slices of bread; store inside a sealable plastic bag or wrap in plastic wrap.

  • Wrap the cleaned lettuce leaves in a damp paper towel and store in another sealable plastic bag or wrap in plastic wrap.

  • Add the mayonnaise, tomatoes, scallion, celery, and pepper to a small plastic container; cover and keep sealed until ready to assemble the sandwich.

  • To assemble the sandwich, remove the top slice of bread and spread the mayonnaise mixture over the top of the mozzarella cheese slice. Top with the lettuce leaves. Place the top slice of bread back over the fillings; slice into wedges, if desired, and serve immediately.

Keep It Crisp

Wrapping cleaned fresh greens (that have been dried in a salad spinner) in damp paper towels and then storing them inside a plastic bag will keep them crisp. They'll stay fresh for several days if kept in the vegetable crisper.
