Preheat oven to 350°.
Lightly spray a small baking dish with nonstick spray. Slice off ½″ from the top of each garlic head and rub off any loose skins, being careful not to separate the cloves. Place the garlic in baking dish, cut-side up; if roasting more than 1 head of garlic, arrange them in the dish so that they don't touch. Cover and bake until the garlic cloves are very tender when pierced, about 30 to 45 minutes.
To serve, squeeze cloves from their skins directly onto bread and use a knife to spread.
